It is often in the simplest product that the true quality of ingredients and artisans can shine. We source all our candied fruits from an extraordinary small artisan in Corsica. He is as passionate and perfectionist about his fruit. Using mostly local fruits and traditional methods for candying (by bathing the peels in sugar syrups of increasing concentration), he produces candied fruits of exceptional texture and taste, with a very low acidity and no bitter aftertaste. We enrobe the candied strips of peel twice in our intense dark chocolate. The result is heavenly: moist, tender, very intense, full of flavour.
