This is the "goods in" room where we receive, control and store incoming ingredients at ambient, chilled or frozen temperatures.
All key ingredients are bought directly from carefully chosen and inspected manufacturers. Gerard's background as a chef has made him and his team rightly obsessed with ingredients. You may find him at 5 am at New Covent Garden smelling the fresh Moroccan mint leaves that will be used later that day or at Borough market picking up a delivery of fragrant Iranian lumis.
Upon arrival and after vehicle check, all ingredients in are put in quarantine, then thoroughly checked then and allocated to our traceability system. This allows us to maintain full batch traceability from ingredients to finished chocolates.
All ingredients that require temperature control are allocated to our fridge or freezers. We check temperature at least twice per day to make sure there is no break in the cool chain for key products like cream, butter or fruit purees.
