Product Description

As we produce our chocolate from ground beans, we are closer to the source and able to choose beans from specific cooperatives. Our Panama bars are made with organic cane sugar from Paraguay and organic and fairly traded cocoa beans from COCABO. COCABO is a community of 1500 small scale indigenous farmers spread over the slopes of the Talamanca mountain range towards the Caribbean Sea. Located in the buffer belt around an internationally protected tropical reserve, COCABO members integrate their social and ecological vision in the traditional cultivation of trinitario and criollo beans. Fermentation is carried out by women and followed by 5 days sun drying and manual selection resulting in an intense chocolate with notes of raisin and wood.
