To make this caramel sauce, we use 3 types of sugar, some cream and pure untreated grey salt, harvested by hand from clay marshes since medieval times. This salt holds a wealth of minerals and trace elements that enrich and balance the caramel taste. It is the balance of flavours - sweet, saline and mineral that make our sauce so popular.
