Since creating the famous sea salted caramels for Gordon Ramsay’s menu at Claridges, Gerard has continued researching ingredients to compliment his original recipe. Only the most successful samples, dutifully vetted by volunteer salted caramel fans, are allowed on our shelves, numbered by the timeline of their conception. Our N°7 caramel is the classic combination of salt and vinegar. We have sourced one of the finest balsamic vinegars available on the market Saporoso Balsamico Malpighi, aged in oak casks for 6 year the end result is a rich balsamic vinegar with notes of wild flowers, grass and mustard- and intense and tart flavour.
