Unlike most other chocolatiers, we produce our own sugar free chocolate and truffles from fine ground cocoa beans. We don't buy in industrial sugar free couverture made from lower grade and blended beans. We conche and refine rare cocoa beans from specific origins in our atelier in Kent. We sweeten them with maltitol, which has 50% less calories than sugar. By adding milk and cream our sugar free dark or milk chocolate is transformed into silky smooth truffles finished with a dusting of pure cocoa powder.
