Tobacco and chocolate share a revolutionary road from esoteric sacred gifts to widespread profane pleasures. Initially dismissed as dry leaves and an odd Native Indian drink, these two agricultural crops have become botanical ambassadors of the American continent. To produce this bar, we conche and refine ground Trinitario cocoa beans from the Dominican Republic with cane sugar in our atelier in Kent. We then infuse this warm chocolate for several days with a blend of tobacco made of sweet fire cured Virginia, spicy Kentucky and Cyprus Latakia. This fusion chocolate bar renders a complex palette of notes from sweet vanilla to heady wood, hay and smoke.
